Rich in protein, fiber, and healthy fats that support the immune system and thyroid, coconut flour is fantastic and fast becoming a healthy baker’s new friend. Gluten free and full of manganese, it helps support bone and nervous system health as well.
Coconut flour doesn’t behave the same in recipes as grain based flour. Coconut flour is denser and dryer, so be careful not to use too much. A good rule is when you substitute coconut flour, use ¼ cup to ½ cup for every 1 cup you would use of grain flour.

Coconut Crazy Pancakes
Ingredients:
5 eggs
3-4 tablespoons of coconut flour (more flour will make a denser pancake)
Kosher salt
¼ teaspoon baking powder
2 tablespoons butter
Directions:
Beat eggs. Mix in coconut flour, salt, and baking powder. In small pan, melt ½ tablespoon butter. Pour in batter to make one pancake. Cook a couple minutes and flip over to cook the other side.
These are thicker pancakes because the coconut flour absorbs any liquid more than traditional flour, so if you prefer thinner pancakes, add a little coconut milk for desired consistency.
Makes four 6-8 inch pancakes

Add ¼ teaspoon coconut extract or coconut flakes.
